- Wash the lemons. If they're waxy, scrub under hot water.
- Zest the lemons. Use a vegetable peeler to remove zest. Aim for the yellow part, but some white is okay.
- Make lemon-sugar mix. Toss zest with sugar in a bowl. Cover and let sit for 2-12 hours.
- Boil the water. Bring 5 cups water to a boil. Turn off the heat.
- Combine and dissolve. Pour in the lemon-sugar mix (including the peel). Let the sugars dissolve fully.
- Strain. Strain out and discard the peels.
- Cool the mixture. Do not add lemon juice yet! Let the sugar water sit until it reaches room temperature (~30 minutes).
- Juice the lemons. Cut the lemons in half. Squeeze juice into a bowl through a strainer. Add to cooled mixture.
