Make the Custard
In a shallow dish, whisk together 3 large eggs, ½ cup heavy cream (or ¼ cup cream + ¼ cup milk),
1–2 tablespoons sugar, 1–2 teaspoons vanilla extract, and a pinch of cinnamon or nutmeg + pinch of salt, if using.
Heat the Skillet
Preheat a skillet over medium-low heat. Add butter or butter + oil once the pan is hot.
Dip the Bread
Dip each thick slice of day-old bread into the custard for 20–30 seconds per side, ensuring full absorption without sogginess.
Cook to Perfection
Place the soaked bread in the skillet. Cook for 2–4 minutes per side, until golden brown and cooked through.
Adjust the heat to prevent the outside from browning before the center sets.
Keep Warm (Optional)
Transfer cooked slices to a baking sheet and hold in a 180°F (80°C) oven while finishing the rest.
Serve Like Royalty
Top with maple syrup, whipped cream, fresh berries, powdered sugar — or a sprinkle of sugar and a torch for a crème brûlée twist.
