Marinate the Chicken
In a bowl or ziplock bag, mix lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper. Add chicken breasts and coat well. Refrigerate for at least 2 hours, or up to overnight for best flavor.
Separate Kid Portions (Kid-Friendly Strategy)
Before adding chipotle: Remove 2 smaller chicken breast portions for young kids (ages 2-4). Set these aside - they stay mild. Add minced chipotle peppers to the remaining chicken marinade for adults and older kids.
Cook the Chicken
Heat a large skillet over medium-high heat. Cook kid portions first (mild) for 6-7 minutes per side until golden and internal temp reaches 165°F. Remove and set aside. Then cook the chipotle chicken portions the same way.
Rest and Serve
Let all chicken rest for 5 minutes before slicing. This keeps it juicy! Slice and serve with cilantro-lime rice, black beans, or roasted vegetables.
