- Brown the Chorizo - In a large soup pot over medium-high heat, cook chorizo until browned. Remove and set aside, leave the fat.

- Add Chorizo Back - Return browned chorizo to pot. Stir and let mingle.
- Deglaze with Wine - Pour in white wine, scrape up browned bits. Simmer briefly.
- Add the Broth and Kale - Add chicken broth, bring to a boil. Stir in kale, let wilt.
- Adjust & Simmer - Add water if needed. Season with salt, pepper, and Cajun seasoning. Simmer until delicious.
