Prep the Pan
Preheat your oven to 375°F. Lay pork chops out in a baking pan (or place pork loin in the pan if using loin instead).
Coat with Honey Mustard
Spread honey mustard over the pork chops (or loin). You don't need a ton—just enough to coat each piece.
Pack with Brown Sugar
Generously pack brown sugar on top of the honey mustard, creating a nice thick coating until you can't see the honey mustard anymore. Really pack it on there!
Add Water
Pour a little splash of water (about 1/4 cup) into the bottom of the baking pan. This helps create steam and prevents burning while creating delicious pan drippings.
Bake
Bake until the pork chops are cooked through, about 25-35 minutes depending on thickness. Internal temperature should reach 145°F. If your oven has a broiler, broil for 5-10 minutes at the end for extra crispiness on top.
Serve
For pork loin: allow to cool slightly, then cut into thin slices. Serve with mashed potatoes—the pan drippings make an incredible gravy! For leftovers, store pork in a ziplock freezer bag with the pan drippings poured over them. They're even better the next day!
